Classic French Ratatouille
A rustic Provençal vegetable dish bursting with summer flavors

Instructions

Make the sauce: Sauté onion and garlic in olive oil until soft. Add crushed tomatoes, herbs, salt and pepper. Simmer for 10 minutes.

Preheat oven to 375°F (190°C).

Pour the sauce into an oven-safe (hammered) pan.

Arrange the vegetables: Layer the eggplant, zucchini, yellow squash and tomato slices alternating in a spiral pattern on top of the sauce.

Season with salt, pepper and a drizzle of olive oil.

Cover with aluminum foil and bake for 40 minutes.

Remove foil, sprinkle cheese on top and bake another 15 minutes until cheese is golden and bubbly.

Garnish with fresh basil and grated parmesan. Serve immediately.
